  • 225g plain flour
  • 110g caster sugar
  • 1/4 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 110g butter
  • 1 teaspoon vanilla extract
  • 2 large bananas, mashed
  • 4 tablespoons milk or buttermilk
  • 2 eggs
  • 70g fudge chunks
  • 70g chocolate chips

  1. Preheat your oven to 190 C / Gas 5. Grease or line a muffin tin.
  2. Sift the plain flour, caster sugar, salt, baking powder and bicarbonate of soda together in to a large bowl. Set aside.
  3. Put the butter and the vanilla extract into a small separate bowl and mix together until creamy. Add the eggs and the mashed bananas and mix well.
  4. Add the creamy mixture into the dry mixture and add a bit of milk each time you mix. When well combined, add the fudge chunks and the chocolate chips. Spoon into the prepared tin, filling each case half full.
  5. Bake in the preheated oven until risen and a skewer inserted in the centre of a cupcake comes out clean, about 15 to 20 minutes,.
  6. Remove from oven and let cool in the tin for 10 minutes before serving.

How to Make Brownie Cupcakes

Prepare the brownie mix according to directions, but add an extra egg and ¼ cup more oil.


Chocolate Chip Banana Bread Recipe – Banana Chocolate Chip Loaf Recipe

All Purpose Flour / Maida – 2 cups / 240 grams
Sugar – 1 cup / 200 grams
Banana – 1.5 cup mashed
Chocolate Chips – 1 cup (use milk, semi sweet or dark)
Baking Soda – 1/2 tsp
Baking Powder – 1 tsp
Salt – 1/2 tsp
Vegetable Oil – 1/2 cup / 120 ml
Eggs – 2

(My 1 cup measures 240 ml)

Preheat oven to 180 degree C / 350 degree F. Grease a 9࡫ inch loaf pan with oil and dust it with flour. Coat it on all sides and set aside.

Sprinkle a tblspn of flour over the chocolate chips and toss well. Set aside.

Take oil, sugar, eggs, mashed banana and mix well.

Add in flour, baking soda, baking powder and salt and mix well.

Add in the chocolate chips and fold gently.

Spoon this into the baking pan and bake for 1 hour to 1 hour and 10 mins. Insert a toothpick to check whether the cake is done. If it comes out clean then it is done.

Remove it from oven and cool it in the pan for 15 mins. Now unmould it and cool it down.

12 Nilla Wafers
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted and cooled
1 1/2 cups mashed bananas (about 4 ripe bananas)
2 large eggs
1/2 teaspoon vanilla extract

Vanilla Pudding - I used Jello Instant Pudding

Preheat oven to 350°F. Line a muffin tin with paper liners and place a Nilla wafer in the bottom of each liner.

Sift and whisk together flour, sugar, baking powder, baking soda, and salt. Make a well in the dry ingredients and mix in butter, mashed bananas, eggs, and vanilla. Stir to incorporate wet and dry ingredients being very careful not to overmix.

Fill each cupcake liner 2/3 full and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely on a wire rack before filling and frosting.

Whipped Cream

1 cup heavy cream
1 teaspoon vanilla extract
1-2 tablespoons confectioners’ sugar

In a large bowl or stand mixer, whip heavy cream until stiff peaks are about to form. Add the vanilla and confectioners’ sugar and continue whipping until peaks form and you reach desired consistency.

Use a knife to cut a hole in the top of the cupcakes. Spoon pudding into the hole and cover the top with whipped cream and a Nilla wafer. You can add a banana slice or crumbled Nilla wafers if you like.

Cupcakes are always a favorite at our house, and these banana cupcakes are both unique, delicious and simply the BEST I’ve ever tried. I got this recipe from one of my good friends (and my favorite source for delicious cupcake recipes), Emma. I always know that if I’m getting a recipe from her it’s going to be a great one.

These cupcakes are so fluffy, light and airy! They have a great banana flavor without being dense like banana bread. And the cinnamon cream cheese frosting is rich and velvety smooth. It goes perfectly with the cupcakes and the flavors complement each other well.


How to ripen bananas for chocolate chip banana bread

Don’t have ripe bananas on hand? There are a few ways you can speed up the ripening process to make your bananas perfect for banana bread!

  1. The night before, break apart your bananas and place them in a brown paper bag. It blocks just enough oxygen which allows the bananas to release a chemical called ethylene. This is what speeds up the ripening process.
  2. Place them on a baking sheet and bake for 15-20 minutes at 300F. They’re ready when they’ve turned COMPLETELY brown. Let them cool before using.
  3. If you’re in a pinch, you can microwave your bananas. Pierce the banana with a fork a few times and microwave it for 30 seconds – 1 minute.
  4. Lastly, your best bet to find already ripe bananas is to look for single bananas at the grocery store. They usually keep a pile at the bottom of the banana display.

How to make Banana and Chocolate Chip Muffins

Step 1 Preheat the oven

To prepare this easy recipe, preheat the oven at 180 degree Celsius. Take foil muffin liners and cover the required muffin cups with it. Once done, take a large bowl and mix together all purpose flour, baking powder, powdered sugar and salt.

Step 2 Prepare the muffin batter
